From time to time we invite (or rather, badger) our friends for their favorite recipes. This one comes from my young friend Abby-Lee Moana. She received it from her friends mum, Mrs Kerr and we want to thank Mrs Kerr, and Abby-Lee for the recipe.
I like to serve this lunchtime treat with some tasty chutney on the side and a light salad such as the Rice Noodle salad we have served in the image.
Ingredients:
- 375 gm (12 oz) courgette/zucchini
- 3 rashers of bacon
- 1 large onion
- 1 cup of cheese, grated
- 1/2 cup oil, we like light olive or rice bran
- 4 or 5 eggs
- 1 cup of self raising flour
- salt and freshly milled pepper
Method
Preheat oven to 150° C / 325° F
Dice onion and bacon and give then a quick chase around a nonstick pan to lightly fry them off.
Lightly beat eggs with the oil.
Grate cheese and zucchini and add to the egg mixture with all other ingredients.
Place in a lightly grease pan, you can use a Pyrex dish or a quiche tin for this.
Cook for 30-40 minutes until it is set.
Serve with a salad on the side.
